In the charming main square of the famous town of Alba, in the Langhe area of Piedmont is Enrico Crippa's casual dining bistrot, La Piola.
The menu changes daily, with one fixed ingredient: truffle. Alba is the kingdom of truffles and Crippa always has the highest quality ones in his bristrot. The best way to savour it is by ordering some 'tajarin al burro'.
Handcut thin pasta simply garnished with butter allows the full flavour of the truffle to be exposed, without being overshadowed by other ingredients.
The menu also boats some excellent, high quality meat, which I suggest trying in raw form.
The dishes can (actually they must) be paired with a glass of one of the many excellent wines the restaurant offers.
